Kitchen Tip Tuesday

This is a quick tip that will save you time, money and space! While I do occasionally use whole garlic cloves in recipes, the majority of the time I can and do use pre-diced garlic. If I buy whole garlic cloves, they end up lost in the bottom of a basket spreading flaky bits everywhere.  Buying a jar of pre-diced garlic has numerous benefits: You wont have to buy, keep and store a garlic press. You save time:  A jar of pre-diced garlic will last a good while.  You'll spend less time searching for garlic at the bottom of the...

Veggie Salad To-Go - Recipe

Veggie Salad To-Go - Recipe

I love recipe options that allow prep in advance on the weekends for a busy week.  This Veggie Salad is full of protein, vitamins, and FLAVOR -- and it's a great mason jar mixer.  Toss it in a pita for a veggie sammie or eat alone as a main course salad.  You can even add a slice or two of lunch meat or guac to the pita, but it's not necessary. Veggie Salad To-Go Prep Time: 10 minutes Ingredients:  1-2 heads Broccoli - chopped, 1/2 head Cauliflower - chopped, 1 16oz can Chickpeas (aka, Garbanzo beans), 1 tsp kosher salt,...

Easy Pesto - Recipe

Easy Pesto - Recipe

Summer is coming to a close, but we're sharing an easy Pesto recipe so you can use up the last of your basil from the garden (or grocery store!).  Pesto has only a few ingredients, but some of them can be expensive.  Pine nuts are one traditional ingredient for Pesto, but we've substituted a few walnuts in place of so many pine nuts - I promise you won't be able to tell a difference! Easy Pesto Prep Time: 20 minutes Ingredients:  2 c. fresh Basil, 1/4 c. pine nuts, 1/8 c. walnuts, 1/4 tsp pepper, 3/4 tsp kosher salt, 1-2...

Caprese Family Dinner - Recipe

I love having Caprese Salad in the summer, but it’s traditionally served as an appetizer.  Today, I’m upping the ante by taking it from appetizer to family dinner!  The traditional Caprese Salad, an Italian salad from the Isle of Capri, is made to look like the Italian flag.  As an appetizer, the ingredients are served uncooked, so it’s typically quick and easy.  We won’t be adding too much time to the prep though!  Try it out and let us know what you think! Caprese Family Dinner Cook Time: 25 minutes Serves: 4 Ingredients:  1 ~9oz box of pasta,  ~13oz pkg...
